Sourced from the truly maritime climate region of Durbanville which lies some 10kms from the chilly Atlantic Ocean to the west, the vineyards are exposed to moisture-laden, seasonal coastal mists which, together with cooling North West breezes keep potentially high summer temperatures down. We prefer to make our Sauvignon Blanc in a more reductive style to preserve the fruit purity and enhance the vibrant fruit flavour profiles.

Sauvignon Blanc is planted in many of the world’s wine regions, producing a crisp, dry, and refreshing white wine. The grape most likely gets its name from the French words Sauvage and Blanc due to its early origins as an indigenous grape in South West France.

Tasting Notes

A vibrant styled Sauvignon Blanc, expressing layered notes of passion fruit, guava and pear. On the palate the wine confirms an array of tropical fruit, ripe fig and gooseberry aromas underscored by crisp minerality, leading to a gentle finish.

This Sauvignon Blanc is made in a lively and fresh style, displaying uncomplicated, but beautifully balanced fruit.

Vinification

Grapes were picked at 3 different maturity levels, and fermented separately with selected yeast strains enhancing a specific profile on each component. The complexity was developed by three months of lees contact on all components, before final blending and bottling.

Ageing

The wine is left on the lees for three months.

“This vibrant cool climate styled Sauvignon presents a vivid lemon-lime colour. As the wine evolves in the glass, it develops from green apple to kiwi notes with intriguing floral tones. The mouthfeel is fresh with a well-structured mid palate, balanced by bright acidity. This wine is beautifully brought together with flavours of pineapple, green pepper and gooseberries. Food Pairing & Recipes

An ideal pairing with goats cheese soufflé or freshly caught line fish with a squeeze of lemon. Its fresh characters are a delightful complement to the fresh flavors of seafood, shellfish and white fish.
