Cabernet Sauvignon may be king but he is not the perfect monarch. Bordeaux’s rise to the most classic and renowned wine region was certainly not built on Cabernet alone and for many years even included Shiraz.

Like many monarchs, Cabernet is thick-skinned, providing all the character of colour, tannin and aroma. Cabernet is also versatile, colonising many of the world’s vineyards capable of producing light and elegant through to dark, rich and powerful wines.

Tasting Notes

This wine has a great structure well supported by the oak. Ripe blackberry and cherry aromas follow through onto the smooth palate framing the mint and dark chocolate flavours. I particularly enjoy working with Cabernet Sauvignon and this is a reflection of a reputable and identifiable Simonsberg Cabernet.

Vinification

Grapes for this wine were sourced from 10 different vineyards within the greater Paarl appellation. Each block was kept separate until final blending. The grapes were cold soaked for a minimum of 5 days before fermentation, and left for at least 12 days on the skins. Fermentation was undertaken in open-top stainless steel tanks with regular pump overs.

Ageing

The wine was aged for 15 months in 2nd fill French oak.

“This wine has a great structure and is an honest and identifiable Simonsberg Cabernet Sauvignon. Notes of dark fruit, plum, cherry and cigar box are evident on the intriguing nose. Ripe blackberry and dark cherry flavours on the palate support the mint and dark chocolate aftertaste. The tannins, fruit and oak on this noble example are perfectly integrated, resulting in a balanced and full-bodied wine, with a seamless finish.” – Johnnie Calitz
