This wine has a deep crimson appearance and offers a rich bouquet of dark chocolate, along with primary fruits like black cherry and currents. These flavour profiles are carried through to the palate, with balanced oak, hints of cinnamon and pine needles. It will age exceptionally well.

 

Each year the vineyards that produce fruit of great depths and concentration are selected for this prestigious wine.

Tasting Notes

The nose shows layers of ripe blackcurrants, red berries, mulberries and hints of cedar and walnuts. A balanced wine, with a flavourful palate rounded out by subtle oak spice and firm tannins.

Analysis

Alc. 14% R.S. 1.8g/l T.A. 6.8g/l pH 3.44

Fermentation

Fermentation was initiated in 400l open top oak barrels and 4-ton open steel tanks. Half of the total crush fermented naturally, the other was inoculated.

Roughly 70% of the wine underwent malolactic fermentation.

Ageing

Free run and press juice were kept separate with only the most delicate wine transferred to 225l French barrels for 24 months.

“The 2015 vintage was truly a spectacular year for Cabernet and this release is an excellent example of a full bodied fundamental Cabernet.
